La Zarzuela is a vineyard of 4 hectares within the Añina production area, it is located between the coastal and inland grape production zones located between Jerez, El Puerto and Sanlúcar de Barrameda.
– It is comprised of the typical Albariza soil and the vineyard utilizes traditional Jerez viticulture methods such as “Vara y Pulgar” pruning.

– Historically it was owned by the well-known Williams & Humbert winery. Later it became the property of the first Rumasa organization (from 1962 to 1982). With the expropriation of Rumasa by the Government, it later became the property of the Medina family from Jerez. In 2008 it was purchased by the current owner, José Manuel Bustillo.

– In 2009, the vineyard began to utilize ecological management practices. In 2019, the grape production was officially certified as “organic.”

– 80% of the Palomino grape production is sold to wineries for the production of organic wines. The rest remains on the estate for the creation of personal experimental wines for family consumption. The grapes are always harvested by hand.

– The owner is a 4th generation grape farmer and winemaker. His professional life, in addition to being a grape farmer, has been developed within the world of wine production research as a Qualified Oenologist and Specialist Technician in Viticulture, for the Junta de Andalucia.
