El Chef David Méndez describe su trabajo como cocina de entrevientos.  Afirma que la comida al final es el resultado de los productores, y lo que le encanta es coger los mejores productos y hacer los mejores platos.  Casi todo comienza con la Santísima Trinidad, el ajo, la cebolla y el tomate, “a partir de ahí ya se empieza a hacer todo, para mí el ajo es la maravilla” dice el Chef. 

Chef David Méndez describes his work as “entrevientos cuisine“. The food in the end is the result of the producers, and what he loves is to take the best products and make the best dishes. Almost everything starts with the Holy Trinity, garlic, onion and tomato, “everything starts from this, “for me garlic is the wonder” says the Chef.

En la carta hay una quincena de platos a lo que suman las sugerencias del día. «Depende de lo que me traigan del mar” dice David.

Uno de nuestros platos favoritos son sus gambas al ajillo que van crudas y que se hacen ligeramente en una original mezcla de aceite, ajo y una emulsión realizada con las cabezas de los bichos.  Las alcachofas también muy ricas y el pargo, exquisito y más cosas que estamos deseando probar pronto.

On the menu there are about fifteen dishes to which they add the suggestions of the day. “It depends on what they bring me from the sea” says David.
One of our favorite dishes is their garlic prawns, which are raw and lightly cooked in an original mixture of oil, garlic and an emulsion made with the heads of the prawns. The artichokes are also very tasty and the snapper is exquisite and more things we are looking forward to try soon.

La carta de vinos elaborada por Chío (Rocío)  ofrece vinos espumosos, blancos, rosados, tintos y, como no podían faltar, generosos.  Es una carta con una selección muy original os mostramos los generosos.

The wine list prepared by Chío (Rocío) offers sparkling wines, white, rosé, red and, of course, fortified wines.  It is a wine list with a very original selection, we are sharing the list of the Sherry wines.
