La uva Palomino está perfectamente integrada en un medio de gran exigencia; soporta las altas temperaturas del estío y los intensos vientos de levante.

Se trata de una variedad de uva blanca, de racimos medianos y y calibre no demasiado grande, color verde amarillento, sabrosa y de escasa acidez. Entre la familia Palomino, sin duda, la más arraigada en los pagos de Jerez, es la Palomino Fino.

🥂Con ella se elaboran los vinos finos, olorosos y amontillados aportando esa sequedad y frescor inconfundibles, con notas aromáticas herbáceas, que en vinos con crianza oxidativa evolucionan a matices almendrados y más aromáticos.

It is the queen of the Jerez region. The Palomino grape is perfectly integrated in a highly demanding environment; it withstands the high seasonal temperatures and the intense Levante winds.

It is a white grape variety, with medium-sized bunches and not too large caliber, yellowish green color and low acidity. And within the Palomino family, undoubtedly the most deeply rooted in the Jerez vineyards, is the Palomino Fino.

It is used to make our fine wines, providing that unmistakable dryness and freshness, with herbaceous aromatic notes, which in wines with oxidative ageing evolve into almond and more aromatic nuances.
